Rice paper is often used in Vietnamese and Thai cooking and is made of rice flour or a mix of rice and tapioca flour. Rice paper is light, healthy, and can really elevate a seemingly average meal to make beautiful spring rolls, either raw, steamed, or fried. The Summer 2011 Fancy Foods Show was a spectacular display of gluten-free goodness. Our Delight Gluten-Free Magazine team was lucky enough to meet with over 200 food manufacturers proudly displaying the gluten-free label. We will continue to write about these companies over the next several months, but wanted to go ahead and send out our first round up of new awesome products!
This past weekend the Gluten Intolerance Group met for their annual education conference in Orlando, FL in an effort to help people navigate in the sometimes very confusing gluten-free world. Chef Aaron Flores who has attended the conference for years, says that there are many signs of progress in the gluten free world, but there is still a lot to learn, especially about nutrition. People need to think about eating healthy foods and not just eating any food labeled gluten-free.
