Marscapone Cheesecake with Milk Chocolate Ganache

Yield: 8-10 servings 

1 pound cream cheese, at room temperature

1 ¼ cups sugar

1 ½ cups mascarpone cheese, room temperature

3 eggs

1 egg yolk

½ teaspoon vanilla

2 cups milk chocolate morsels

  1. Preheat oven to 300 degrees F and grease a springform pan.
  2. In a standing mixer, beat cream cheese and sugar until combined. Add mascarpone cheese.  Add eggs one at a time, ending with the one additional yolk. Add vanilla and beat until smooth.
  3. Fill  pan with the batter. Place in a water bath and bake at 300° for 60 to 75 minutes or until fully set. Chill for at least 2 hours. 
  4. Meanwhile, melt milk chocolate morsels using a double boiler. Drizzle chocolate over the top of cheesecakes before serving and allow to cool.
