Crostini with Herbed Goat Cheese
Yield: 24 bites 

2 Against the Grain gluten-free baguettes
8 ounce goat cheese log, sliced in ½ inch slices
1 teaspoon dried oregano
1 tablespoon fresh parsley, chopped finely
¼ teaspoon red pepper flakes
1 teaspoon lemon zest
½ teaspoon sea salt
2 tablespoons extra virgin olive oil

  • Slice the gluten-free baguettes into 24 pieces and arrange on a baking sheet. Heat in a 325 degree F oven for 5 to 7 minutes, until warm and toasty.
  • On a serving plate, arrange slices of goat cheese. Sprinkle oregano, parsley, red pepper flakes, lemon zest, and salt on top of cheese.
  • Drizzle olive oil on top of cheese and seasonings.
  • Serve herbed goat cheese with gluten-free baguette slices.
