Citrus Cupcakes with Fluffy White Frosting

Yield: 12 cupcakes 

1 box Betty Crocker Gluten-Free Yellow Cake Mix

2/3 cup water

1 stick butter, softened

2 teaspoons vanilla extract

3 eggs

2 teaspoons freshly grated lemon zest

1 tablespoon fresh lemon juice

1 tablespoon fresh orange juice

1 container Betty Crocker Fluffy White Frosting

  1. Preheat the oven to 350 degrees F. Prepare a cupcake pan with paper baking cups.
  2. In the bowl of a standing mixer, combine Betty Crocker Gluten-Free Yellow Cake Mix, water, butter, vanilla and eggs on medium speed for about 30 seconds.
  3. Scrape down the sides of the bowl, add in lemon zest, lemon juice and orange juice and mix on high for an additional 30 seconds.
  4. Pour the batter in equal amounts into the cupcake pan and bake for 18-23 minutes until a toothpick inserted in the center comes out clean. Cool completely.
  5. Put the Betty Crocker Fluffy White Frosting into a pastry bag and carefully frost cupcakes in desired pattern.
  6. Serve with a big glass of milk!
