Chocolate Chip Oatmeal Raisin
Yield: 24 cookies

1 cup unsalted butter
1 cup brown sugar
1 cup granulated sugar
2 eggs
1 teaspoon vanilla
2 cups gluten-free all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups quick cooking gluten-free oats
1 cup chopped nuts
1 cup raisins
1 cup chocolate chips

  1. Preheat oven to 350 degrees F.
  2. Cream together butter, brown sugar, and granulated sugar in a standing mixer. Add eggs and vanilla and mix well.
  3. In a separate bowl, combine flour, baking powder, baking soda, and salt. Add this mixture into the wet ingredients. 
  4. Add oatmeal, chopped nuts, raisins, and chocolate chips. Mix well.
  5. Roll dough into 1-inch balls and place on a greased cookie sheet. Flatten each cookie by gently pressing a fork into it.
  6. Bake for 10 minutes. Allow cookies to cool on sheet for about 5 minutes before removing to a cooling rack or serving plate.
