This past weekend the Gluten Intolerance Group met for their annual education conference in Orlando, FL in an effort to help people navigate in the sometimes very confusing gluten-free world. Chef Aaron Flores who has attended the conference for years, says that there are many signs of progress in the gluten free world, but there is still a lot to learn, especially about nutrition. People need to think about eating healthy foods and not just eating any food labeled gluten-free.
