Braised Ginger Chicken & Tofu

Braised Ginger Chicken & Tofu
Yield: 4 servings

4 ounces dried rice stick noodles
1 fluid ounce fish sauce
1½ ounces maple
4 teaspoon canola oil
2 garlic clove, minced
4 tablespoons ginger, minced
1 pound ground chicken
1 teaspoon chili sauce
6 scallions, minced
½ pound firm tofu, diced
2 tablespoons fish sauce
Cilantro leaves, chopped
½ cup chicken stock

1. Heat oil in heavy saucepan over medium heat. Add garlic and ginger and cook until golden. Add chicken and cook until chicken is cooked through.
2. Add chili sauce, scallions, tofu, and fish sauce. Cover and lower heat. Braise 15 minutes, stirring occasionally. Add chicken stock and cilantro and reduce liquid out.
3. Serve with steamed white rice.
