Black Bean Cilantro Rice
Yield: 4 servings Gluten-Free, Dairy-Free, Egg-Free, Soy-Free

1 tablespoon unsalted butter  
¾ cup yellow onion, diced
3 cloves garlic diced
1, 13 ounce can of coconut milk (regular or light)
½ cup water
1 teaspoon ground cumin
¾ teaspoon kosher salt
½ teaspoon ground coriander
¼ teaspoon ground ginger
1/8 teaspoon ground nutmeg
1/8 teaspoon ground allspice (optional)
1 cup short grain brown rice
1, 15 ounce, can black beans, rinsed and drained
¼ cup fresh lime juice
¼ cup cilantro, chopped
